(Paul) Ed Edwards AIWS

hp_slide3(Paul) Ed Edwards joined the wine trade in 1998 and has managed fine wine stores in London, Sydney and Perth. He led Hyde Park Cellars to win the NSW Liquor Store of the Year Award in 2001, before moving to the historic cellars ‘Avery’s of Bristol’ in England, to study for the WSET (Wine & Spirits Education Trust) diploma. In 2005, he was accepted as an Associate Member of the Institute of Wines & Spirits. In Perth, Ed has managed The Wine Store (Since renamed as Young George)  in East Fremantle and more recently worked as the Sales and Events Manager at Swanbourne Cellars, developing an extensive events and fine wine sales program.  In 2015 Ed spent 10 months as opening team Beverage Manager, developing and implementing the beverage strategy for Perth’s iconic State Buildings, during this time he sourced and curated the wine and beverage lists for Petition, Como the Treasury, Post, Wildflower and as a supporting role for Long Chim.

In 2008, Ed was the Western Australian representative in the Australian national final of the Negociants ‘Working with Wine’ Fellowship.

He has been a regular tasting panel member for the Liquor Barons Panel, Scoop Magazine Panel and Peter Forrestal’s Quaff Panel and has also judged for Winestate Magazine on a number of occasions.

In 2012 and 2013 he was an Associate Judge at Royal Perth Wine Show and in 2013 and 2014 an Associate Judge at The Qantas Wine Show of Western Australia.

Having spent 13 years in wine retail, Ed established Full Bottle Wine Education & Events in 2011. He regularly teaches WSET courses, masterclasses and events.

Outside of Full Bottle, Ed regularly presents on a variety of wine topics for business events and wine retailers. He has been wine consultant to a number of small bars in Perth.

Maurice Hovens

Level 3 Award in Wine and Spirits (WSET – UK)

MA Public Administration – Leiden University (The Netherlands)

After completing his MA from Leiden University in the Netherlands, Maurice worked for six years for the Government in the Department of Environmental Affairs.  After a visit to Osteria Bancogiro whilst on holiday in Venice  Maurice discovered a love for wine and soon afterwards took the first steps towards a career in wine with a wine appreciation course.

The opportunity to become professionally involved in wine came when Maurice moved with his young family to Perth in 2004. After completing every course offered through the Wine Industry Association of Western Australia (Now Wines of Western Australia), he started work at Millbrook Winery in Jarrahdale and later worked for two years at Swanbourne Cellars. In 2008 Maurice became Wine Sales Manager for The Grocer, successfully selling imported wines from Melbourne-based importers Enoteca Sileno and Bibendum Wine Co. to Perth’s growing restaurant scene.

In 2010, Maurice returned to the Netherlands, and took on the role of Sommelier at a new Italian fine-dining restaurant in Leiden, but exhausted by the late nights moved back to selling wines, this time in the aristocrat neighbourhood of The Hague. During his 3-year stint in The Netherlands he also completed WSET Level 3 Award in Wine and Spirits, and commenced the WSET Diploma Course, completing 2 units before his return to Perth.

During his time living in Europe, Maurice has travelled extensively throughout the wine regions of Germany, Italy and France and in particular has a deep appreciation and understanding for the wines of Piemonte.

Although close to some of the world’s greatest vineyards, Maurice and his family missed Perth and it’s burgeoning food and wine scene and returned in early 2014 to join the Full Bottle teaching team. For the last 12 months he managed East Fremantle boutique wine store, Young George and has recently taken on a sales role for Margaret River producer, Clairault Streicker.

Blair Hill

BPE, Dip Ed (UWA), Grad Dip Bus (Marketing) (ECU), Dip Wine & Spirits (WSET – UK)

In 1996, Blair completed the Certificate and Higher Certificate at the Wine and Spirit Education Trust (WSET), which is based in London. He completed the Graduate Diploma in Business (Marketing) at Edith Cowan University in 1999 and the two year Diploma in Wine and Spirits (Wine and Spirit Education Trust – London) prior to this. He is an Associate Member of the Institute of Wines & Spirits.

Blair currently consults to a number of Western Australian boutique wineries in strategic and tactical sales and business development across brands, effective creation, development and management of new brands and commercial business acumen across domestic and international wine markets.

Prior to Blair’s consulting business he was the Marketing and Sales Manager for Aravina Estate which is situated at the northern end of the Margaret River wine region. He was responsible for all domestic marketing and sales for the brand and managed exports in Asia, including China, Singapore and Malaysia. He was in charge of wine production, marketing of the vineyard restaurant and management of the Premier Club.

Blair was the Marketing and Sales Manager of the Fogarty Wine Group (Millbrook Winery – Perth Hills, Deep Woods Estate – Margaret River and Lakes Folly – Hunter Valley) for 9 years.

Blair is currently delivering the Level 2 and 3 of the Wine and Spirit Education Trust (WSET) courses to the Perth wine trade. Blair has judged at a number of wine shows including the Swan Valley and Geographe Wine Shows.

For many years, Blair was the wine reviewer for ABC 720 radio – ‘Afternoons’

In 2007 Blair was awarded the Court Wine Bar/Wine Press Club Media Award for contribution to the WA wine industry through the work with ABC 720 radio.
